For a long time, my “cooking” pretty much meant making myself a sandwich… Quick, easy, with no real cooking. But recently, I’ve been pushing myself to learn how to actually cook, and I think I’m starting to like it.
Some of my early wins have been creamy Tuscan salmon, spicy lemon orzo with sausage, chicken pot pie, and a hearty white bean skillet. I’ve also loved trying Italian-inspired peperonata and meatballs, and then switching gears completely with Thai shrimp curry (which was a lot easier than it seemed, even though I had a mini panic attack in the middle of it lol).
Lately, I’ve started branching out into vegan cooking. Minestrone soup has already become a staple, and I just made a Moroccan pumpkin and chickpea stew that was so flavorful it’s definitely staying in the rotation. I’m learning more about nutrients, and trying to keep my diet (and my boyfriend’s) balanced.
I’m still figuring things out (like how to stay calm when I’m feeling rushed) but it’s been fun adding new healthy recipes to my rotation that taste good and feel good. Who knows, maybe one day I’ll even be able to call myself a “good cook.” For now, I’ll just say: work in progress, but at least it’s good enough to eat!
