This is a very dense salad that keeps me full throughout the day, tastes great and is easy to prep for the week in advance. No cooking is required - just chopping and throwing together!
Ingredients
Dressing
1shallot minced
1/4cup red wine vinegar
1/2cup olive oil or oil from marinated mozzarella
1tbsp Italian seasoning
1/2tsp Kosher salt
1/2tsp Dijon mustard
1/4tsp black pepper
Salad
14oz garbanzo beans drained
1red bell pepper diced
1cup cherry tomatoes halved
12oz marinated mozzarella balls drained
6sundried tomatoes chopped
4marinated artichoke hearts drained and chopped
4oz smoked turkey chopped
4oz pepperoni chopped
1/2cup flat leaf parsley chopped
4-6 leaves basil finely sliced

Dressing - In a medium bowl whisk together dressing ingredients.

Salad - In a large bowl, add beans, red bell pepper, tomatoes, mozzarella balls, sun dried tomatoes, artichokes, turkey, pepperoni, parsley, and basil.
